Effect of Post-Harvest Drying Methods on Lemon Balm (Melissa offcinalis L.) Plant Drying Properties: Modeling, Color, Chlorophyll

Özet
In this study, the effect of drying methods on quality characteristics of lemon balm plant was investigated. Drying operations carried out within the scope of the steal were carried out by shade, oven, temperature controlled microwave and hybrid dryers. The average moisture content of the product determined with respect to dry base was dried from 2.95±0.2 g (water). g-1 (dry matter) to 0.11±0.02 g (water). g-1 (dry matter) in drying operations. In terms of drying times, the longest shade of lemon balm reached the desired moisture interval in 3180 minutes, and in the shortest time the desired moisture content in the hybrid dryer reached 17 minutes. When the moisture values away from lemon balm during drying processes were processed in the drying models as dimensionless moisture ratio, it was found that the best predicting model of drying curves was Jena-Das and the weakest predicting model was Lewis. In terms of color criteria, lemon balm was determined in the drying process in the shade environment closest to freshness, while the most suitable method in terms of chlorophyll value was determined in the drying process in the shade environment. When the color and chlorophyll properties were evaluated together, it was found that the drying of the balm plant in the shade environment is an alternative and the oven drying method could be preferred as an alternative.
