Özet
Harvest time and storage are important factors on biochemical composition of leafy vegetables, such as spinach and lettuce. In this study, influences of daily harvest time and storage conditions on biochemical composition of lettuce (Lactuca sativa L. var. crispy) were investigated in unheated greenhouse conditions during spring season. Plants were harvested six different times in a day (8 am, 10 am, 12 pm, 2 pm, 4 pm, and 6 pm) and evaluated variations in biochemical composition. In the storage treatment, plants were harvested at 6 pm and stored two different storage temperatures (10 oC and 16 oC) at 80-85% relative humidity. Analyzes were done daily for a week. Nitrate, ascorbic acid, soluble solid dry matter, titratable acidity, and pH were determined.
