Determination of physico-mechanical properties of Amasya and Granny Smith apple cultivars during shelf life periods

Özet
The aim of this study was to determine the physico-mechanical properties of two cultivars of apples, Amasya and Granny during shelf life periods after three months storage. In this experiment, the physical properties (size, sphericity, surface area and weight lose); mechanical properties (rupture force, specific deformation, rupture energy and required power of rupturing) and total soluble solids (Brix) content of two apple cultivars were investigated among 0, 7, 14, 21 and 28 days shelf life periods, respectively. The size of the apple cultivars ranged from 58.88 to 58.91 mm and 60.87 to 60.10 mm for Amasya and Granny Smith cultivars, respectively. During the shelf life period, the sphericity ranged from 1.047 to 1.060 (Amasya) and from 1.056 to 1.060 (Granny Smith), respectively. Rupture force and specific deformation ranged from 509.2 to 331.0 N; 39.07% to 29.10% for Amasya cultivar; and 498.3 to 231.7 N; 92,1% to 35.1% for Granny Smith cultivar, respectively. Brix (total soluble solid content) values ranged from 11.98 to 12.70% for Amasya cultivar; from 12.48 to 11.90% for Granny Smith cultivar, respectively. The effect of shelf life periods on mechanical properties and Brix value were significant for Granny Smith apple cultivar (P<0.01)
